  2. ‘The chicks that hatch in winter’ … I find this interesting, that he’d be familiar with the risks to chicks that are hatched during the winter cold. Mostly because it shouldn’t happen often in this setting – chickens naturally stop (or at least drastically reduce) laying eggs during the winter, especially chickens that aren’t from modern breeds specifically bred over a long period of time to produce more eggs. In modern circumstances, that can be prevented by providing artificial light, but without it the decreasing hours of daylight cause the chickens to gradually decrease the number of eggs they produce until they stop producing them altogether. Once the natural daylight hours increase again, they start laying again. The likelihood of hens going broody (trying to hatch eggs) also decreases, and since even broody hens need to leave the nest every day to take care of bodily functions, the chances of a rare egg that actually gets laid AND has a broody hen to hatch it surviving long enough to produce a chick (21 days of steady incubation) is even lower. Without central heating in the chicken coop, the eggs would get too chilled and die. I’m not saying it’s impossible, just very rare. I’m not criticizing, I actually find it an interesting point of contemplation.
