It was so delicious and I never knew what it was called (it was on the buffet). I am so glad to see it here.

    I’m from Louisiana, and we have huge “crawfish boils” during our crawfish season (roughly late December-June). Basically you get a huge pot, boil water, add potatoes (chunks of white or whole red), onions, and corn on the cob (half size), and a box of seasoning (like Zatarain’s). Then you dump in the live crawfish and boil them until they are bright red. After that we plate them (people usually plate 1-5 lbs worth) and enjoy. Sometimes we don’t even bother with plates…just cover tables with newspaper and dump the pots on that and just eat straight from the table. You pinch the tails and suck the heads (if you’re brave, which I am not). Also, don’t eat the straight ones…they were dead before they hit the water and you only want to eat the fresh ones. Also, when you’re done, wash your hands with hot water, squeeze lemon juice on them, and then rub them with salt before rinsing. It will take the smell away! (Because cher, your hands gon’ stink after all that, lol.)
